This workshop is a follow‑on to the highly successful Built to Roll introductory event and is designed for aspiring and early‑stage mobile food business owners who are ready to move from learning to doing.
This is not an introductory workshop. While anyone may attend, this session assumes participants already have a basic understanding of what is required to start and operate a mobile food business in North Carolina, including familiarity with permits, inspections, and regulatory agencies. Content from the introductory workshop will not be repeated.
This hands‑on accelerator is designed to help participants actively work through permit requirements, inspections, and food safety considerations needed to operate legally and confidently. Attendees will engage in practical exercises focused on preparing documentation, navigating Environmental Health processes, and identifying next steps toward approval.
The workshop will feature guest speakers from Environmental Health, commercial kitchen commissaries, and industry education leaders, giving participants direct insight into what regulators, kitchen operators, and experienced professionals are looking for.
We’ll address common roadblocks, clarify what regulators are really looking for, and show how to use the permit and plan review process as a smart business planning tool. Participants will leave better prepared to work with Environmental Health, avoid costly mistakes, and take concrete next steps toward opening and operating their mobile food business.
